Meatloaf – Meatless Version

SERVES 6; GLUTEN-FREE, VEGAN

Meatloaf will do anything for love but would you do anything for meatloaf?

And meatloaf is a lot older than he looks.

-The first mention of him is in the 5th century in the famous Roman cookery collection, Apicius.

-But the mention of meatloaf that was momentous appears as Fannie Farmer's recipe for "Cannelon of Beef" in her 1918 Boston Cooking School Book, because who would have thought that this would be the trigger for every American mom to create her own version? So much so that meatloaf was voted the country's seventh favorite dish according to Good Housekeeping.

Our version is vegan, a delicious alternative using chickpeas (you might know them as garbanzo beans) as a meat substitute. Chickpeas are full of iron, phosphate, calcium, magnesium, manganese, zinc and vitamin K, and soon your stomach will be full of meatloaf!

Ingredients:

3⅓ cups cooked chickpeas, drained and rinsed. Can use frozen

1 onion, diced

2 celery stalks, chopped

2 carrots, diced

2 garlic cloves, minced

1 cup cornmeal

½ cup natural unsweetened plant-based milk

2T soy sauce

2T olive oil

2T chia seeds

2T tomato paste

1 tsp smoked paprika

3T vegan Worcestershire sauce - optional

For the maple glaze:

½ cup tomato paste

4T maple syrup

4T apple cider vinegar

1½ tsp paprika
